March is National Nutrition Month!

March is celebrated as “National Nutrition Month” and the American Dietetic Association is encouraging everyone to “Eat Right With Color.” The consumer is interested in healthy eating and wellness lifestyles. A major part of healthy eating revolves around the variety of fruits and vegetables that we eat each day. Children will model the eating behaviors and food preferences of their parents so it is important that parents set a good example.

An easy way to increase the variety of foods that we eat is to vary the colors at meals. You might offer a brown chicken breast, green broccoli, and an orange sweet potato at one meal and a white fish, a purple cabbage/carrot slaw, with brown rice at the next. Try the addition of sliced strawberries and orange sections to green leafy salads for a flavor boost. Add sliced roasted red peppers and zucchini to your sandwiches. Make a “super salad” for dinner; include a variety of leafy greens, red, orange, and yellow bell peppers, white sweet onions, red tomatoes, orange carrots, tan chickpeas, and top with green pistachios. The possibilities are endless.

So during this month of March, make it your goal to have a least 3 different colors at all meals. This will increase the variety of the nutrients you receive from your meals and snacks. Slowly make small menu changes at home and no one will notice.
