Herbs and Spice Make the Holidays Nice

Now is the time of year to give up that salt shaker for the seasonal spices that not only taste good but have the ability to improve our health. Herbs and spices can lose their flavor over time so now is a good time to check the herbs and spices in your spice rack. Greens herbs such as basil, parsley, sage, and dill will fade in color over time. The reddish spices cinnamon, paprika, and red pepper will turn from red to brownish in color. These changes will affect their taste in recipes and medicinal properties.

Herbs and spices need to be stored away from direct light, heat, and humidity. Most people store them on the kitchen counter or in a cabinet near the stove. Neither is a good idea. When adding spices or herbs to a hot dish or cooking pan, shake the herb/spice into your hand or onto a spoon first and then add to the dish. Shaking the herb or spice container right over the dish allows the steam and moisture to go inside the bottle which will weaken the potency over time.
